The chemical milk composition and its coagulation properties varies due to many factors related to the animal or environment. Among these factors the lactation stage, parity, and breed were studied on two lots of cows : Montbelairde and prim’Holstein investigated in real production conditions in two different farms located in plains of high cheliff. The results indicated that the lactation stage has a more significant effect that the parity on milk composition (content fat and proteins) and coagulation properties, using in our tests the rough extract coagulant sheep in comparison with the rennet reference. Our observation have also shown that increasing of the useful materials during lactation was progressive and parallel to the decrease of the quantity of the milk produced and the fat content which is much more sensitive to other factors such as the feed. Moreover the correlation study between production factors and physic-chemical and technological milk variables has confirmed that there are significant and negative correlations confirming the well- known factors for the two breeds.
